And now the last three things I have done have been to make a mug cake from huel.
Base ingredients are
1 scoop of vanilla huel
1 tea spoon of coconut oil
1 egg
some water
2 minutes in a microwaveā¦
What I have added include
Coffee + Walnut + Raisins (Bit bland, coffee didnāt come through enough - but I ate it too hot I think!)
Cinammon + Drop of Honey + Walnut + Raisins (Tasty!)
Finely grated lemon rind + juice of half a lemon + walnut + raisins + touch of vanilla extract (So yum! reminded me Starbucks lemon muffins, but had no poppy seeds!)
Iām going to have to move onto baking larger cakesā¦ Carrot cake is on the listā¦

Bit of a fail with my first attempt. I had an egg spare so thought Iād give it a go.
38g of huel (1 scoop) egg, tsp of coconut oil, some vanilla essence, juice and rind of half a lemon. Added āsome waterā and blended, then added some dried blueberries before adding to mug and microwaving for 2 minutes.
Was still very wet, so did it for another minute, still wet, so did another (4 in total).
The ācakeā had set towards the top but bottom was pretty porridgey.
So Iām thinking I added too much water, especially as I had lemon juice too - can anyone be more specific how much water they added? Iād try again, but only had one egg to hand.
It actually tastes pretty good as a semi-set pudding/dessert - but wasnāt the cake I was hoping for also used unflavoured Huel but the lemon and blueberries have sweetened it up enough for my liking, but could probably have done with some chocolate flavour system next time unless I use vanilla huel.
Water is just for consistency and making sure it fully mixes.
If you have wet ingredients you can afford to not add as much water, you donāt need a lot. I think you will get a feel for the consistency when it works, nothing too runny!
