I’ve just started with Huel and made some Huel supplemented oatcakes that turned out pretty well, so thought I’d share.
Ingredients:
100g Unflavoured Huel.
100g Oats (could probably swap with extra Huel)
1 Tbsp olive oil
1 tsp salt
1/2 tsp sugar
1/2 teaspoon bicarbonate of soda
1 tbsp plain flour (probably optional, see method).
Approx 100 ml warm water
Method:
- Mix Huel, oats, salt, sugar and Bicarb.
- Rub in oil - till it “resembles breadcrumbs”, or till the clumps of oil are gone.
- Slowly add water while mixing/kneading (I did it one handed to keep a hand free to add ingredients). Add enough water to make it quite a firm dough.
- I found this mix a bit crumbly, so added the plain flour to help bind it. you could probably leave out the flour, or use an alternative (honey might work, or vegetable shortening? whatever that is). - roll out on a floured surface to about half a centimetre, or desired thickness.
- cut into discs (I used a glass tumbler without problems) and place on a greased/floured baking sheet.
- put in preheated oven for about 20 mins, I took them out when they just started to brown, but adjust for taste.
- Cool on a wire rack and serve with cheese/houmous/anything you would enjoy.
Anyway, I thought they were good and I hadn’t found any savoury recipes in the “How to” guides. So thought I’d share, feel free to comment.
I think it would be fairly easy to adjust them to a gluten free recipe, but I don’t know how…
